Fried Smelts
Ingredients:
- 2 lbs. Smelts, Dressed
- 1 Cup Dry Bread Crumbs
- 1/2 Cup Parmesan Cheese (Optional)
- 1/4 tsp. Salt
- 2 Eggs, Lightly Beaten
- Lemon Slices for Garnish
Preparation:
Combine bread crumbs, cheese and salt. Wash and pat dry smelts. Dip smelts in beaten eggs and then into bread crumb mixture. Set breaded smelts on a rack to allow coating to dry for 15 minutes. Deep fry breaded smelts in oil heated to 350 degrees. Drain on paper towels.
